All mentioned item types are not versioned items. There is not much information you can change in SG, folder, category, keyword. A bit more can be changed on publication. 

Is there some critical data changes in mentioned item types that customer would like to monitor?

Is it possible to have user info such as created by and modified by on structure group/folder/publication/category/keyword

Could we have user info on publication/folder/SG/category/keyword, such created by and modified by
