I have used the CV section and find it very useful. So far, I added all data in English
However, I was not able to find where to add the localized information in another language so I could create CVs both in English and in French (in my case).
Is this possible?

No, unfortunately CV localization isn't as simple as invoice/quote localization. In settings, CV data tab allows to enter information only on one language.
All I can offer here for now is to create another CV template where you provide data explicitly (as static text) in target language, without loading it from CV settings. And dynamic part can still be localized (like unit names, specializations, etc.) by using Name localized 1, Name localized 2 and Name localized 3 fields.
