We currently have 6 Studio 2017 licenses installed in our network, and we just purchased upgrades for all of these licenses to 2021. Is it possible to have both versions running in parallel? and if so, can the license server for each version be installed on the same server?

It is not possible to run 2017 and 2021 professional network licenses in parallel.
When you upgrade, you are exchanging your 2017 license(s) for new 2021 licenses and must return the 2017 licenses before getting the new 2021 versions.
Its only possible to run two different versions of Studio network licenses if you purchase (rather than upgrade) new licenses.
