All the files, projects, TMs are saved on your computer so you can simply open them in Studio 2021 from their location.
You can also use Studio Migration Utility plugin to transfer your data from Studio 2019 to Studio 2021: https://appstore.sdl.com/language/app/studio-migration-utility/481/
