I have purchased Trados Studio 2021 Starter and my license is activated. I have a problem because when I open Trados, it's impossible to create a new project, the option is in grey. Could you help me pls ?

The Starter version is the basic version and has several limitations. It is ideal if you are working mainly with single files translation and also with SDLPPX project packages received from your customers, so the option being greyed out it is one of the Starters limitations,
