Hi Peter,
It can be done, and has been done for smaller exceptional videos. Tridion Docs however is not a digital asset management system to allow rendering in all kinds of screen resolution, subtitling, streaming and more.
Usually videos are only relevant for a sub-part of your output formats, mostly the dynamic web-based ones... video in a PDF is not that common :-)
So often the videos are stored somewhere else and linked to. As the video delivery experience (like streaming, bandwidth, player, etc) is key for most users.

Thanks Dave, that's what I was looking for. Indeed. We're only interested in storing small video files and including them as part of a html publishing output package.
