Before we started converting to Tridion Docs, is was standard for us to include the part number, version number, and date of publication at the bottom of the cover of a publication.
I can put these values in a library topic and reference them as variables, but I think it would be better to reference the document properties to get values that will update automatically when if a new version is released.
I don't currently know how to access those properties within a topic.

The approach that I have seen most often is to access the relevant metadata/properties from code in a DITA-OT plugin for a given output (HTML, PDF, etc.) The metadata is sent as .met files along with the xml to the toolkit pipeline. The set of included metadata is, I believe, configured in the IBackgroundTaskHandler - ExportObjects plugin. More info here: docs.rws.com/.../ibackgroundtaskhandler---exportobjects

Yes, you can approach this through the .met files and the normal property definitions of Tridion Docs.
However, the configuration location suggested by Mark is incorrect. Please have a look at the export section in the settings > XML Settings > Publish Plugin settings
