Since my last re-install, MultiTerm 2019 won't let me edit some parts of terms (eg. picklists) and keeps throwing this error:
I'm on Windows 10, my Internet Explorer is fully up-to-date, for all that that's worth, and Active-X is enabled across the board. Java is up-to-date as well, as is MultiTerm.
Anyone have any ideas?

As you have mentioned you reinstalled MultiTerm- this perhaps will suggest that you experienced issues previously.
One of the main causes of problems is when MultiTerm and Studio are not running the latest updates.
Please open Studio- Help- Check for Updates (and then repeat for MultiTerm.
If the problem persists, then the issue might be file related or indicate the installation files are corrupt.
You could try the following FreshStart app to reset user files
https://appstore.sdl.com/language/app/sdl-freshstart/876/
