I'd like to know what's the difference between "merging" and "opening all files" in a project.
As a matter of fact, I usually select and open project files (chapters of a manual) all together, so that I can work on the whole manual and autopropagate cross-references throughout the whole document. Would "merge files" give me more functions and options?

First bof all there are two types of "merging" files:
1. Merge when you create a Project
2. Virtual merge after the project has been created
The second one is exactly what you are already doing when you select multiple files and open them together.
The first one is a permanent merge for the duration of your project. The files are merged into one SDLXLIFF and you cannot open the files on their own anymore. One file, that includes all the files you merged. It's mostly useful if you are sharing SDLXLIFF files for translation since you only need to send one file around, or if you want to "encourage" the order in which files are handled by the translator.
Generally, if you are preparing your own projects and working on them yourself the virtual merge is a better option... in my opinion.
