→カスタム・フィールドの作成ができることまでは分かったが、「訳文文節」フィールドの値を一括で「訳文文節(修正前)」のフィールドにコピーすることは可能でしょうか?
(履歴を残すという方法ではありませんが、変更箇所を確認する方法として。)
・翻訳メモリの各翻訳単位は、[システムフィールド] として、[作成者]のほか[前回の更新者]や[前回の更新日]といった情報を保持している模様ですが、これ以上の「変更履歴」や「修正前の訳文文節」情報は保持していないと認識しています。

Trados Studio doesn't have the concept of change tracking in a TM, so you only have the system fields to indicate the TU has changed, but no record of what the previous text was.
The only workaround I can suggest to this in Studio would be this if you have Studio 2019:
Post-Edit Compare supports you creating comparison reports of the changes between any versions you like. So working this way you would see exactly what changed as the full history would be available to you. I know it's a workaround and not exactly what you probably had in mind, but it might be workable.
If you can only use Studio 2014 then you could probably do a more manual approach and use SDLXLIFF Compare to achieve the same thing and manually save the SDLXLIFF files for the projects for comparison.
