I have studio 2019.
When I create a new project, I'll add one or two memories and ensure that "update" is ticked. Then I'll open the document(s) I want to work on. When I go back to settings, "update" is unticked.
At first I thought I was forgetting to tick the box, but today I very carefully ticked the box, finished creating the project, opened the document, checked the settings, and lo and behold, box no longer ticked.
Make sure you are checking these settings in the right place. If you look in Project Settings it should still be checked. But if it wasn't checked in File -> Options it will remain unchecked even if you checked it when you created your project.

File, options is irrelevant when you use a new memory for every project (one that the client supplies). When I create a project and tick update in the project settings for that new memory (my own memory - the one I always use - is always ticked and stays ticked) that should stay ticked in the project settings. It doesn't.
Please can you share a screenshot of your settings page, All Language Pairs and also specific language pairs.
