It sounds as though you have two things happening:

1. you are using the wrong Excel filetype
2. you have copy source to target activated by default

You can resolve this by making sure you are using the Bilingual Excel filetype for your file when you create your project. This article might help you:

Try the SDL Data Protection Suite:

This tool makes it smple to protect text after the project has been created by converting them to tags.  You can find an explanation here of how it works:

The article refers to a separate plugin, but this is now part of the SDL Data Protection Suite.

Note that the Bilingual Excel filetype does have an Embedded content features so if you prepare your project from scratch you can use this.  I referred to it in your other post:
