how could I take one step backwards, "undo" 'Copy all source to target'? It is too easy to make a mistake, warning, confirmation, anything. It just happened.

A few options:
1. Undo (Ctrl+Z) immediately after the unwanted action.
2. A second option would be filtering. If the segments are unconfirmed, you can go to the Review tab and filter on Unconfirmed, then clear the segments.
3. If you have the Community Advanced Display Filter plug-in installed, you can combine filtering on Not Translated with segments where source text equals target text, then clear the filtered segments.
