Hello guys. Sorry for this stupid question but ...i do not understand how to set a field as “ORGANIZATION” in projects' view!
What I would need to do is, for example, classify projects BY CUSTOMERS (or someother custom criteria).
Is that possible?

Quite simply you can't! "Organisation" is a label related to the use of projects created in Groupshare and will be populated automatically since you have to select an organisation when you create your projects.
You can use "Customers", but with the exception of SDL Trados Business Manager Studio doesn't make use of this at all. At least that was until Studio 2021. So I'd recommend you populate your projects with the "Customer" field filled (when you create your projects or via Project Settings -> Project -> Customer) and then when you upgrade to 2021 you'll finally be able to do something useful with this!
Long overdue enhancement... but quite a nice one.
