First of all, your 2019 plugins will not work in 2021. You have to install the updated ones.
Secondly, installing in 2021 is very simple. Just open the appstore integration, click on the AppStore View, them select the ones you want to download one after the other. No need to install, or anything, just click them. When all the downloads are complete you'll be prompted to restart Studio.
That's it. Fast and simple.

It's a great improvment for sure. It looks like any app not updated for 2021 is not showing up when searching for it, and that is also very good. But, there is always one, this means that right now, the improvments in 2021 can not compare to the loss of functionality I experience not being able to use the apps I use in 2019, most of them third party apps. That is a new one for me, I always want to use the newest version of Studio. But I guess they are working hard to get them ready for 2021, so as lon as I can use 2019 in the meantime, there is no problem.

We've just submitted an update to the App Store to reflect that now the Xbench plugin installer on https://www.xbench.net/index.php/download also supports SDL Trados Studio 2021.
