If I have already set up customers in earlier versions of Trados (2017, 2019, etc.) do I need to set them up again now in 2021? Does anyone know how to just bring them all into 2021 so that I don't have to set them up again?

I am assuming that you are referring to the project templates?
If so, we would recommend that you never 'reuse' the templates from previous versions, but to always create new templates in Studio 2021
Creating new templates in Studio 2021 will avoid unwanted issues at a later stage.
