I just upgraded to Studio 2021, and when I connect to my client's 2014 server I get no results from the TM.

No surprises there... 2014 is simply far too old and uses very different technology. This KB article might be helpful:

So, I just wasted almost 400 EUR?
If you purchased a version of the software made in 2020 without checking that one made in 2014 would still work together, and this is the only reason you wanted the software... then yes.

6 years is not such a long time. When Microsoft moved from the 2003 Office format to the new 2007 Office format, they released a converter so 2003 users could open files in the new format.
I think that SDL could have made the effort to maintain backward compatibility, specially considering the price of a server.
Now, for some clients I need the newer version of Studio and for some the older. Really fun.
It all depends on the changes in technology in that time period and the complexity of the solutions involved. Comparing like this doesn't demonstrate anything at all.
Most customers who use the server solutions have a maintenance contract and they are automatically updated to the latest versions. It's unfortunate, for you, that your customer has not.
They should be able to send you a project package though, with a project TM. There is no need for you to have to connect to their server. If there is then you really should have checked this using the trial version first.
