I found my TM became so large after optimization, and after checking for repeated segments I found a date repeated hundred of times - possibly thousands - is there a way to delete all at once?
This doesn't sound right at all. True duplicates are normally not even added to a Studio TM. Can you show a screen shot of the repeated dates?

There are about 10 pages with the same date...I know something is wrong since the first time I used Studio 2021 it did require to "update" or optimize the TM and then it went from 700MB to 2Gigs

This is expected. The update process extracts fragments from your TM and adds them for use with the UpLift process. How much larger really depends on the size and content of your TM so it won't be the same for everyone. But 700Mb to 2Gigs sounds fairly normal to me for this process.
However, the multiple dates isn't normal at all! You could try this:
If the dates are recognised as dates, or as duplicates then they should be stripped out leaving only one. If that doesn't happen would you be able to share your TMX file with me as I'd like to look at this and make sure development can see it? You can send it to pfilkin@sdl.com if this is ok?

Could you please give me a hint about how can I display the document structure information in the Translation Memories view?
It will happen by default if you have segments in there containing this information. For example, this page does:

Same TM and this page doesn't:

I can't really tell you any more than that! To be honest I've never even noticed this before. It's not a great deal of use in here as you can only see the DSI in the column. You can't open it and find more useful information in there. I'm also not sure what information will be displayed if you were to try and insert some custom stuff into a TU being added to the TM. I'd hazard a guess not everything because only some things get used to disambiguate multiple Context Matches for example. Word files are normally good for this, but custom XML not good at all... so I think there is really no rhyme or reason for it I'm afraid.
If it's really important to understand this then Daniel Brockmann might have a good answer to your question?
