My memories are all scattered between the folders of every version of Studio I ever owned since 2011. I'd like to put them all in the 2021 folder. Can I just move them? (I understand the project templates will have to be recreate.)

You can move everything without any problem, you can even move templates and then even edit them inside your new Studio to reflect the new paths. If you need help to do that, let me know.

Indeed... it's wise to recreate these and don't use old templates on new versions.

Obviously not only the templates will need to be recreated. As Paul said already, for 2021 you should create ALL templates from scratch.
Also your old projects will moan for changed TM location. In such case you can simply point Studio to the new TM location and everything will work again.
A small piece of advice: should you wish to switch between computers, create a TM and TB paths in both PCs, which shall be exactly the same. For example d:\translation resources\language pair\customer\TM and d:\translation resources\TBs
This way you can move projects between PCs without reconfiguring them.
