Keeping both Studio 2019 and Studio 2021 on the same device should not affect each other, especially in your situation when you only want to use the older version occasionally. There are plenty of translators who are using both versions on a daily basis (especially after the upgrade), and the performance is not affected. Even though you've upgraded your license (so you exchanged the license for Studio 2019 with the one for Studio 2021), I don't see a reason why you shouldn't use both versions on your device.
