How do I create a shortcut for ü Umlaut?

Question

I have changed to Studio 2021 from Studio 2019 where I had created shortcuts for &uuml; (Alt-u) and &ouml; (Alt-o) etc., but I cannot find an explanation on how to do this in Studio 2021. I have successfully altered some of the existing shortcut keys to Alt-something rather than Alt-Ctrl-something, but I cannot create a new shortcut. 
 In Studio 2019 I had used the Action "Insert symbol" under "All shortcuts". There is obviously a step missing. I would be extremely grateful for any help with this. Thank you.

Hi Barbara Glen 
 You can do this by going to: 
 - Advanced\Insert symbol - Select the character you want to insert and click on 'Insert' 
 By default this character will be assigned the shortcut 'Alt+Shft+1' and then Alt+Shift+2, Alt+Shift+3, etc for any other characters. If you want to change the shortcut key combination you can goto: 'File\Options\Keyboard Shortcuts\Symbols'.
