In fact you can influence the target font in the finished document.  Trados Studio has a font mapping feature which is available on most of the filetypes.  It's different to the font adaptation settings as that will only influence what you see in Studio.  You'll find the settings against the filetype, so if you want this for all files you handle you'll need to make the change in multiple filetypes:

It is a bit hidden... in fact there is no UI for it at all!  But if you right-click in the blank space you'll get this:

Taking Microsoft word as an example, if I add a new font for Japanese in the font mapping interface, the font in the exported translated Word file will be displayed as this new font, right?

Right.  But you may have to remove the existing entry first.  So like this for example:

I did this:

1. removed the entry for the Japanese Language
2. Added it back
3. selected all the source fonts so I map anything that comes in the source to one specific target font
4. I chose "Yellowtail" as the mapped target font

In this one:

I did this:

1. removed the entry for the Japanese Language
2. Added it back
3. selected "Adobe Devangari" as the source font expected and mapped it to "Algerian" as the target font
4. selected "Arvo" and "Bahnschrift" as the possible source fonts expected and mapped them to "Baskerville Old Face" as the target font
