I find strange that when I open Trados Studio 2021, in the column "Translation Memory" , I see a "default" TM ("English. German") that I have never chosen or voluntarily inserted... I don't know the reason.

There is never any default placed here. You have 100% opened it at some point and now it's in the navigation pane so you can select it at ease. This is only a maintenance view and it has nothing to do with you working translation projects.
