Go to File -> Options -> Keyboard Shortcuts and you can edit the commands as you see fit in there.

On the hyphen... if you don't have the type of hyphen you want on your keyboard then you can use alt codes to get what you need, or if it's a one off try using Insert Symbol.  Open the file so it's available for translation in the Editor View, then switch to the Advanced Ribbon.  Insert Symbols is at the end on the right.  You can create a keyboard shortcut for this when you edit the shortcuts, and you can also create shortcuts for the symbols you add.  So if you add the hyphen you want you can call it from a shortcut afterwards.
