Saving text files to ensure characters are correctly rendered (German > English)?

I'm currently translating content for our new Website and receive the files from a colleague as Text files - effectively he sends me the source from the WordPress page with all the formatting tags - e.g. <h3> <li> etc. and also some plug-ins. I have created RegExes to handle the most common one - a concertina effect (used frequently in FAQs - when "open" it shows the the question and the answers, when "closed" it just shows the question.

[foldout title="QUESTION HERE TO BE TRANSLATED" Level="3"] with a closing [/foldout] after the answer.

The main problem is that the texts use umlauts and ß in the German original - and these don't render correctly in the file that I translate in Studio 2015 - e.g. an "ö" becomes "ö" etc. I am presuming somewhere the character Encoding is not set. Where does it need to be changed?
