Hello David Berry-Lichtenberg,
SDL Studio is not a subtitling application- ie an application that is designed to allow you to create subtitles.
If you are looking at creating subtitles (from text documents) you will need something like AegiSub or Subtitle Edit ( both free of charge)
What Studio allows you to do, is take an already subtitled video along with the source file and translate to target- using for video for reference-

I was just womdering whether it would be possible to translate a text and then save the transaltion as an .str file or similar. I'll check out those other programmes you mentioned.

Subtitling files have additional information, mostly connected with when the text is displayed. You have to add this additional information, which is not in your average source text. That is what AegiSub or Subtitle Edit etc. are for. Don't underestimate the amount of work (depending on how fancy you want your subtitle display to be).
The next step is to join the subtitles with the video (if you want to "burn it in"). You should know what you want to do with the subtitles (open or closed caption) before you decide on a subtitle file format.
But Studio is about translating... not video editing.

My problem is that I m only interested in translating. I have a simple text file as a "script" with no additional information. That now needs to be turned into a subtitle file to accompany the audio file so the translation can be read during the playback.

If you are only interested in translating the given script- then you can do this in Studio as normal and don't need the subtitling app (as you don't have the video anyway).
However, as Daniel has said, there is a fair amount of work involved in creating proper subtitle files and burning these onto the video itself.
Studio is simply not the right tool for you here to do this.

Your simple text file with no additional information can't be automatically converted into a subtitle file with all the additional information that is needed for those files to work properly. Studio can't do it and I am not aware of any other program that could.
If a person is supposed to read it while the audio plays, a simple text file with the target text should do, or not?
Studio is about translating. InDesign in, InDesign out, Plain Text in, Plain Text out etc. Only pdf is returned as a Word file. Everything else is input format = output format. If your customer wants a subtitle file returned, they have to give you a source language subtitle file.
