I need help setting up HTML and Excel files in Trados Studio 2024 so that variables like the one below are set up as tags, are locked and excluded from translation and word count.

I've tried setting up a placeholder \|=.+?=\| but it didn't work.

Your expression seems fine so this should be converted to a tag and reported in the analysis as a tag. If it's not, I'd check these things:
