Hello everyone,
The Translation Memory window does not pop-out when I open a new project; therefore, I cannot choose the language-pair. My Trados Studio 2017 automatically choose EN(US)-SP(Latam). I must have clicked the option of "do not show this window again", not sure.
Does anyone know how I can "recover" this option, so I can choose the language-pair I want before starting translating a project?

If I understand you correctly, you have already created the project and the issue arises when you open the project for translation?
If so simply go to the 'project settings' option in the top left of your screen
Now you should be able to create or use a TM

Thank you, Steven. I followed your instructions, but unfortunately, it did not work.
I tried to use the TM I already had created EN(Canada)-SP (International)
but I get this system message.
So I tried to create it again, I choose the TM name EN(Ca)-SP (Intl.), but when I want to browse to change the source and target languages, I cannot remove neither En(US) nor Sp (Latam) because there is no drop-down box with language variations. See screenshot below.
Just curious, what language is SP? And SP(Latam)? No such standard code. As far as I know, I never saw SDL using such denomination, nor anywhere else (TBX, TMX, XLIFF, etc.) Do you mean Spanish? For Spanish the ISO 639-1 code is "es" (whereas the ISO 639-2 code for the same language is "spa"). Could it be "es-419"?
