Regarding your font issue, try fiddling with Options>Editor>Formatting display style. I think 'Show all tags but do not show formatting' will work for you.

What regards the hyphen issue, most probably this is because of the font in your source document. There are some fonts that make hyphen look even longer than en-dash (e.g. Bat angChe, Gulim or GulimChe). If you disable showing formatting, Studio will override your source doc font and apply the one you set in Options.

Thank you, Stepan, for your reply but I don't see "Formatting" under Editor. I'm using Studio 2019.

However, I suppose this will not change much. If your target file is correct, you will have to live with this slightly imperfect view in Studio.

Also remember that you select fonts individually for your languages. That is, if you want to see a font both in source and target, you should select and apply it for two languages.

Also, you need to close and re-open your document to see the changes.

Thank you, Jerzy. This does do the trick and solves the hyphen issue of the target text, but turning off the formatting of the source text is also somewhat inconvenient. So, I'd need to choose either of them and live with it.

Thank you, Stepan. I've selected the fonts individually for each language. I closed and reopened the file but it didn't change the font on my Studio unlike yours.

Really? I see it exactly the other way round. Seeing all the formatting including the font face (which very often is not present in my system, which leads to many problems) does disturb me much. I need to focus on text and the formatting is of very secondary meaning. On top of this, properly created documents do use only very little of local formatting.

I don't understand this. If it solves the issue, then smth has changed, hasn't it?
Make sure you press ok after you select a font. If you select a font and just close the wizard, no change will apply.

Yes, I hate it too. Generally, I prefer the 'do not show formatting' but it adds superfluous tags for bold, italic, underline, etc. Unlike other CAT tools, you have to choose what you need more: font of your choice with extra tags or minimum tags with inconvenient font.
