Since the last update, the New Local Project screen, window for selecting Source Language, won't fold open, I cannot choose or enter a source language. This is a critical bug/issue as it renders Studio useless.

New Project - New Local Project. I did not type anything, I just click the options.
Are you sure the window wasn't open behind your current windows? Worth checking just in case.

Sure. I just opened Studio and immediately went to create a local project. There was nothing else opened.
ok - we'll note it and see if this happens anywhere else. Most important thing is this isn't critical. You are able to create a project and you can work.

No, the problem is in Studio, I cannot choose a source language when trying to create a local project from "Tell me what you want to do" (I can from Home, as just discovered, just never used that option). Next I went to Trados Live to create the project there but it won't handle the file type.
True, I created the project from Home. Now I'm here anyway, the target language is somehow set at German by default (never did that) and I would like that to be Dutch (Netherlands). Where do I go to change that?
I cannot remove the default template. Do I need to import another one, set that as default, remove the old default, and that "old" default will be imported again automatically when Studio restarts? Am I understanding that correctly?
In the project template used. You can change it now in the project wizard. After having created the project and before closing the wizard chose "update current project template". This will store your settings for future use.

In fact you are not. xml files are not like Word and do not have all the same structure. It works, but this is not the proper way. Same as using a water pump pliers will allow you to untighten a nut, but most probably make it unusable for future.

This is the problem. The instructions from Jerzy will not help you solve that as he suggested changes affecting the filetype in Studio, not Trados Live.
But since you can work in Studio, and because I doubt that the filetype is really an issue for Trados Live, I don't think we need to address anything urgently anymore. But please feel free to send me the file and I'll gladly check it tomorrow. I don't know how familiar you are with Trados Live so the problem could be something else and not the filetype at all. If you explained what happened, shared a screenshot, etc. then it would be more helpful in helping us to help you.
