Thanks for getting back to me on this. I discovered what the problem was. Turns out that the "Notes" check box also needs to be selected for the respective file types in "Options" also.

This is not quite the correct understanding of your problem. I think what this means is you simply made your change in the project settings for an existing project and this is too late. If you want this option to take effect you have to do it before you create your project. So if you are only working with the default project templates and don't create your own, then this is indeed under File -> Options. So all new projects, for you, will always be using the settings in File -> Options. This is the only place you need to make the change in your case.
