Hello!
I am working (in Trados) on a normal Word file and I just realized that I have a lot of segments with text that is NOT visible in the Word file, some sort of "hidden text" behind a table?
Since this text must NOT be translated, how can I set Trados not to read it, not to process it and not to count it?

It's not uncommon to see that in some cases while we see a simple word at first sight, when in Studio it becomes more complex and pulls out unnecessary content for translation. The source may contain embedded content or just like you mention tables and charts that may not need translating.
In this case, it's really useful to have a simple source assessment prior to creating the project so you know what to expect while in Studio.
In Studio, go to File tab- top left corner in the ribbon- >Options>Filetypes: Microsoft Word 2007-2019>Common.
In there make sure the checkboxes from the below image are not selected.
Go to browse for the file to preview it, and play bit those settings until you're happy with what you have in the preview.
After that, you can create the project with the content that you choose to be extracted for translation.
