We would like to replace non-breaking hyphens and non-breaking spaces by normal hyphens and normal spaces in Studio projects that are pre-created by an automated process. We don't have the possibility to modify the original Word file for the moment. We use Studio 2021.

Yes, it is possible to batch edit text in the source file of a Trados Studio project. You can use the "Find and Replace" feature in Trados Studio 2021 to replace non-breaking hyphens and non-breaking spaces with normal hyphens and spaces. Here's how you can do it:
Step 1: Open your project in Trados Studio 2021.
Step 2: Go to the "Editor" view.
Step 3: Click on the "Advanced" tab.
Step 4: In the "Find and Replace" section, enter the non-breaking hyphen or non-breaking space in the "Find what" field.
Step 5: Enter the normal hyphen or space in the "Replace with" field.
Step 6: Click on "Replace All" to replace all instances in the source file.
Please note that the \s meta sequence should not be used in the Replace field during Batch Edit, as it replaces any whitespace character, including tabs, soft returns, etc. Instead, you can add a regular space from the keyboard (e.g. from Spacebar) and Trados Studio will replace the multiple whitespaces correctly.

You cannot do this directly in Studio, as the source text in Editor can only be edited in individual segments, not in batch. But you can install ToolKit and replace whatever you want there, both in source and in target.
There is no "Find and Replace" section in the "Advanced" tab.

The use is very simple: add file, files or project. Make sure all files are selected. Define your search & replace criteria on the Replace tab and perform the operation. This is all.
A word of warning: as usual, when playing a surgeon on the internal file structure, before doing so create a full backup of your files, just in case.
