 Catalan is supported but you do need to make sure you select the correct flavour for it

Please provide a screenshot and detail the steps you are taking when trying to add the source language, I tested with my Trados and I can select it from the Dropdown when creating a project.

You don't add the source from there, you select it when you start a project

Click on the arrow head on the Source tab and write there Catalan - in my screenshot the dropdown menu is opened as I have performed the search and got those results. Catalan won't be pre-selected.

Once again, the source is selected as I showed you above - from the dropdown when you start a project.

And even when I go to search for it in the settings - Language Paris - I find it but I still manually type Catalan to search for it in the dropdown

What edition are you using of Trados? You did not say and I already mentioned I am using Trados 2024

In Trados 2019 Freelance and older versions of Freelance you had to select 5 languages when you started Trados as the languages that you are to use for projects. 
 Did you select Catalan? If it was not with the 5 languages you selected, then you won't be able to add it as source. The 5 languages can be modified as explained in the link below

 This limitation was removed with later editions. 
 Just a small note for the future, please specify what edition of Trados you are using, as there are differences and updates of features and functions between them, as you can see.
