In fact, I was confused because when going through the steps suggested by the different answers, I could just never find any window including the offered options. On the joined picture, you can see what I see on my French version of Studio. I translated the function so you can understand why I am confused: for example, I cannot get a window that include the words “Document Settings” in any way, either by opening a single file or a project. There is no “Advanced” field either…

I can see that you have screens matching precisely the contents of the questions, maybe there is just a difference between our language versions, then…?

Don't you see this when you use the single document approach to translation?

As Paul has pointed out, you're showing the project settings window, but when you first tell Studio that you want to open a single file for translation (one that hasn't been opened in Studio before), the very first window you'll see is not this one, because there's no project yet and therefore no project settings. Instead, you will see the  window you need: "Translation Memory and Document Settings". Try opening a completely new file for translation as a single document.
